Classic Beef Stroganoff

  • 500 g penne pasta
  • 750 g beef sirloin steak, cut into half-in. strips
  • 250 g fresh mushrooms, sliced
  • 2 medium onions, thinly sliced
  • 6 garlic cloves, finely chopped
  • 100 g unsalted butter
  • salt and pepper
  • 300 ml beef stock
  • dash Worcestershire sauce
  • 1 tsp all-purpose flour
  • 300 ml sour cream
  • 1 lemon, for zesting
  • 1 beef stock cube
  • 75 g pickled gherkins, diced
  • 1 bunch spring onions
  • 75 g fresh parsley


  1. Cook the pasta in lots of salted boiling water until still firm to the bite.

  2. Cut the beef against the grain into strips and season with salt, pepper and lemon zest.

  3. Sauté the onions along with the garlic and mushrooms, add the beef strips and cook for about 5 minutes. Do not overcook, keep a little moisture inside the meat.

  4. Add a little water and grate the stock cube into the meat. Add the flour. Cook for 5 minutes, then add the sour cream and gherkins.

  5. Season with salt and pepper and Worcestershire sauce. Turn off the heat place a lid on top for a few minutes to complete the cooking.

  6. Combine with the pasta and finish with lots of fresh chopped parsley and spring onions.
