False Hare (German Meatloaf)

Description: Preheat the oven to 400F. Mix together onion, meat, raw eggs, breadcrumbs, carrot, celery and garlic until well combined. Season well with salt and pepper. Flatten the meat mixture on a workbench and place peeled, hard boiled eggs on the top of the mixture. Enclose the eggs with meat to create a loaf. Place the loaf on a greased roasting dish (a sheet pan works well) so that the sides of the loaf do not touch the dish. Gently pour the beef broth over the meatloaf. Lay bacon over the top. Place the roasting dish in oven and bake for 45-50 minutes. Baste the loaf with pan juices every once in a while. When the meatloaf is done and the bacon is crisp, carefully remove the meatloaf from the pan and allow to rest. Add the cold water to the corn starch and combine to blend. Pour the mixture into a small pot along with all of the pan drippings over medium heat until it starts to thicken. Whisk in the sour cream and blend until thickened and smooth. Slice the meatloaf. For each plate use a slice of meatloaf and spoon a couple of spoons of gravy over the top
