Jalapeño Cheddar Drop Biscuits

  • 4 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tsp. kosher salt
  • 1 tsp. pepper, freshly ground
  • 1 tbsp. baking powder
  • 1 tsp. baking soda
  • 1 cup butter, margarine or lard
  • 1 cup sharp cheddar cheese, grated
  • 1 jalapeno (finely minced)
  • 1 1/2 cups buttermilk


  1. Heat oven to 425°F.

  2. Combine the flour, sugar, salt, pepper, baking powder, and baking soda in a large bowl.

  3. Cut in the fat until it’s mostly the size of small peas.

  4. Add the cheddar and jalapeño and mix well.

  5. Add the buttermilk and mix.

  6. Scoop about 2 ounces of dough at a time onto a sheet pan, spacing the biscuits at least 2 inches apart (no more than 12 to a pan).

  7. Bake for 8 minutes, then rotate the pans and bake for 6 minutes more, until the biscuits are just golden brown.
