Ingredients

  • 1 medium avocado
  • 2 bell peppers
  • 2 grilled chicken breasts
  • 1/4 tsp chili powder
  • 2 Tbsp cilantro
  • 1/4 tsp cumin
  • 3 servings lettuce
  • 1 cup already quinoa
  • 3 servings salsa
  • 3 servings salt and pepper
  • 1 cup cheese

Steps

  1. To get started heat oven to 35
  2. Mix salt, pepper, cilantro, cumin, chili powder, and quinoa together and place to the side.
  3. Cut the bell pepper in half (if you havent already) and clean out the seeds.
  4. Layer quinoa and then grilled chicken into the pepper, and then top each with cheese.
